CSA Recipes

Posted 10/31/2018 11:24am by Amy Philson.

Today is Week 22 of the season.  We only have two more weeks to go!  Our season ends one week before Thanksgiving.  This year we have a three-week break between seasons because of the way the holidays fall.  If you haven't yet joined our Winter CSA, be sure you do it soon.  We will be making decisions soon about which locations have enough members for delivery.

Farm News

Glacial Till Farm

We have been busy planting their garlic:

We needed these couple of days of warmth to give our kale a boost of growth for the next cutting.

Harmony Grove Farm

The drastic change in temperatures and cloudy days caught our lettuce off-guard recently.  Growth almost came to a halt, and we had to begin heating our greenhouse earlier than expected.  But growth is speeding up, and we will have lettuce for CSA Shares again next week.

Bushel and a Peck Farm

We are busy getting ready to open Philson & Friends, our temporary store at Grove City Outlets.  Opening day is November 9, and we will be there through Christmas.  We sell our maple products at the store, and we also invite other local artisans and farmers to join us to share the rent and expenses.  Besides our maple products, we will also have local honey, soaps, lotions, jewelry, home decor, alpaca, pet products, and more.  If you know of any local artisan who may be interested in joining us, please ask them to contact me.  We still have a few spaces left, and they don't have to be there.  We are spending lots of time getting the store ready and also bottling syrup and making other maple products.

Homemade Falafel ... falafel is usually fried in oil as in this recipe, but I have baked it, too, with minimal oil.  It doesn't always hold together as well, but it still tastes delicious.  Choose whichever method you desire.

Red Potato Salad with Creamy Cashew Dijon Dressing ... for a creamy dairy-free/vegan option

Roasted Carrot Salad with Arugula and Pomegranate ... You can sub balsamic vinegar for the pomegranate molasses, but don't skip the pomegranate seeds!  It also calls for fennel bulb, which will add depth of flavor but it won't ruin the salad if you leave it out.

Roasted Sweet Potato, Wild Rice, and Arugula Salad ... roast some winter squash in place of the sweet potato if that's what you have.  Maybe add a splash of maple syrup or honey to the squash to make it mimic the sweet potato more closely.

I hope nobody drowns in all this rain that is supposed to come the next couple of days.  I'm afraid that we will have some farmers getting stuck in the mud this week.
