Black Bean and Sweet Corn Salad

  • 3 ears fresh sweet corn  
  • 1 med finely chopped red cippolini onion
  • ½  a lime   
  • 3 cups no-salt-added cooked black beans, rinsed and drained
  • 1 bunch cilantro leaves, finely chopped
  • 1 bunch parsley leaves, finely chopped
  • 1 avocado peeled and diced
  • Salt to taste
  • Pinch of Vulcan fire salt (optional)

Wash Sweet Corn ears and slice kernels of off the ear .  In a large bowl mix black beans, sweet corn, onion, herbs and avocado. Squeeze lime over everything and salt to taste.

Serves 6
