Cool Radish Pickles
3-5 radishes, sliced very thin
rice or cider vinegar
2 ice cubes
Place thinly sliced radishes in a small serving bowl. Add rice vinegar or cider vinegar to halfway cover radishes. Sprinkle with salt (about 1/4 tsp) and sugar (about 1/2 tsp). Mix well and adjust seasonings to taste. Top with 2 ice cubes. Let sit for 10 minutes. Mix again, adjust seasonings if necessary, and enjoy.
Leftovers refrigerated overnight are delicious the next day too!
