Kale & Sweet Potato Hash

1 large sweet potato, chopped
1 yellow onion, sliced
3 cloves garlic, minced
1 bunch kale, chopped
2 tsp. cumin seeds
salt & pepper
1 Tbs. fresh lemon juice
1 Tbs. fresh cilantro leaves
~1/4 cup cheddar cheese, grated
dash of cayenne pepper

Toss the sweet potato, onion, and garlic with olive oil, cumin, salt and pepper. Mix to coat. Roast at 400 for ~30 minutes, until the sweet potatoes are tender.

In a large skillet, saute the kale in olive oil. Add the lemon juice, and cook for 3-5 minutes, until tender. Toss the kale with the sweet potatoes, cayenne pepper, cilantro, and cheese. Serve over black beans with a fried egg on top for a decadent meal.
