Peach Salsa
2 ripe peaches, diced
1 tomato, diced
¼ cup red onion, diced
1/2 jalapeno pepper, seeded and diced
Juice of 1 lime
1 clove garlic, minced
¼ cup cilantro, chopped
Salt and pepper, to taste

1 1/2 – 2 c cooked chicken, pulled into bite-size pieces 1 large or 2 small ripe peaches or nectarines, peeled and chopped 1 long sweet pepper, julienned2 t. fresh thyme or marjoram or basil ¼ c. plain yogurt or mayo 1 t. curry powder 1
Fresh Roasted Tomato Sauce
Ingredients:
3-4 lbs tomatoes* I used half pastes and half slicers, but you can use either. If using all slicers, you may want to cook it down a little more, but it will still be delicious!
